THE BEST BEETROOT RISOTTO
Even for those who enjoy cooking, it can quite easily become a chore. So for those evenings I have lots of time, I like to put on some good music and stand over the stove stirring a risotto. It always serves as a reminder of why I fell in love with cooking. This is a classic of mine, but it’s still a favourite. ROASTED VEGETABLE WINTER SALAD
This salad works perfectly for late autumn and throughout winter. It’s laced with all my favourite seasonal veg - sweet potato, Brussels sprouts, beetroot and cavolo nero and has the most delicious and easy dressing. I eat this straight away when it’s warm for lunch or dinner, then keep the rest in the fridge and eat it cold as a lunchbox the next day.
