There are a couple key things here: First, I love using bone-in skin-on chicken thighs, since the chicken will come out SO good and juicy. You can always remove the skin if you like after its cooked. Next, if you do enjoy a crispy skin, the baking powder here will help the chicken come out nice and crispy. . This is how I made it (feel free to multiply for more) . 1. Preheat oven to 425F. . 2.Grab 4 skin-on bone-in chicken thighs, dab them dry with a paper towel and add them to an oven-safe dish.  Dont over crowd so they have space. I like these in the pan since the chicken releases a lot of delicious juice, but you can also put them on a rack to get them crispier. Whatever you decide, let chicken come up to room temp about 30mins before you start seasoning it. . 3.To season chicken, drizzle it with 1 tbsp avocado or olive oil, 1 tbsp dijon or German mustard, the juice of 1 lemon, a couple pinches salt, 2 tbsp onion powder, 1 tbsp dried dill, 1 tbsp sweet paprika, and 1/2 tsp cayenne pepper. I also add 1/2tbsp baking powder to make skin crispy. Mix well. . 4.Put chicken in for an initial 35min visit at 425F. At 35mins remove the chicken, spoon over the juices at the bottom of the dish, and put it back in for another 5 minutes. . 5.Make the sauce by processing 4 tbsp plain thick greek yogurt (or sour cream), 3 tablespoons mayo, the juice of 1 large lemon, a handful fresh dill, 1 tsp onion powder, 1/2 tsp Aleppo or any chili pepper, and a pinch of salt. Process well. Give it a taste, and adjust with anything more you want. I usually add more lemon juice to make it more citrusy or add a tablespoon of water to make the sauce last longer, but your call. This makes several servings. . 6.Remove the chicken from the oven, plate it up however way you want (with salad, rice, quinoa, or if you’re lowcarb, my high protein lowcarb Kaizen rice would go great here!). Then have however much of the sauce you want. . These homemade kabobs are packed with an insane level of flavor and are SO easy you’ll love em. . I used all ground beef here, but highly recommend using a mixture of ground beef or lamb if you want to add even more flavor. (About 50% ground beef, 50% ground lamb). . Here is how I made it: . 1.In a food processor, pulse together 1/2 medium yellow onion, 3-4 large cloves garlic, and a large handful of fresh parsley. Pulse well. . 2.Add 1b of ground beef (or mixture of beef/lamb) to a large bowl. Top it with the marinate. Then add three pinches salt, 1tbsp thyme, 1/2 tsp turmeric, 1/2 tsp cumin, 1 to 1.5 tbsp sumac, 1/2 tbsp Aleppo pepper, and fresh cracked pepper. . 3.Now, to make it super juicy, add 1/4 to 1/2 tsp baking soda and 1/4 cup bone broth. Mix it well, ensuring everything is mixed well. Cover and let it soak up the flavors for at least 30 mins, but ideally 2-4 hours. . 4.When you are ready to eat, dip your fingers in a bit of water to make it easier, then use your hands to roll them into logs, patties, or whatever shape you prefer. You can grill these or if you dont have one, or pan fry them on medium heat till they develop a nice crust on all sides. Time depends on how thick/thin you make them, so just make them to your liking. . 5.I plated these up and dusted with more sumac, fresh parsley, and served it with an easy labneh dip (or thick greek yogurt) that I mixed with lemon juice, salt, and topped with olive oil and Aleppo pepper. . 6.I also added some simple pickled red onions I made by slicing 1 large red onion super fine. Add the onion to a bowl. Top with the juice of 1 large lemon, a couple pinches salt, and 2 tbsp sumac. Mix well, then let onions sit for 30 mins or so, stirring a few times during that time. . Add seasoning and oil to chicken . Massage seasoning well into chicken. 2. Add 2 tablespoons olive oil to oven safe skillet or pan. 3. Sear and cook chicken 3-4 minutes on both sides . Cover with lid for last 1-2 minutes. Remove the chicken and Set aside. 4. In the same pan deglaze the pan with broth by scraping the bottom of the pan for all the flavors. Add in the salsa verde sauce and let it simmer for 2 minutes. Tuck in the chicken and let it cook with the sauce until sauce is reduce by half. About 4-5 minutes on medium low heat. 5. Garnish with cheese and put in oven to melt the cheese . 6.
