#HealthyEats #ProteinPower ➡️INGREDIENTS: 4 eggs 200g cottage cheese 1 small zucchini 1 large tomato Salt and pepper 2 tbsp olive oil 4 tbsp grated cheese 1 tbsp fresh parsley ➡️PREPARATION: 1. 🔥 Preheat the oven to 180°C and prep an ovenproof dish. 2. 🥒 Dice the zucchini, lightly salt it, set aside briefly, then drain excess water. Dice the tomato and drain excess water. 3. 🍳 Crack eggs into the dish, add cottage cheese, veggies, salt, pepper, and olive oil. Mix thoroughly. 4. 🧀 Sprinkle the top with grated cheese. 5. 🕒 Place the dish in the oven and bake for 35-40 minutes until golden. 6. 🌿 Once done, let it cool a bit, then sprinkle with parsley. Ærligt, da denne her hytteost-trend kom på banen, tænkte jeg at jeg da godt lige kunne lave en salat med hytteost. Men at det nok er sådan lidt kedeligt.. Men jeg blev overrasket. Faktisk virkelig overrasket, for det smager hammer godt og giver en virkelig god konsistens. Cremet og blød. Lidt krydret dressing ud over, så er det altså spot on. Prøv min opskrift her.
