Sushi rice:  1.5 c Japanese style medium grain rice (I use Botan) Cold water for rinsing, plus 3/4 c water for cooking  1/3 c seasoned rice vinegar (I use Kikkoman) OR instead of seasoned rice vinegar: 1/3 c unseasoned rice vinegar  2 tbsp sugar 2 tsp salt Rinse uncooked rice in cold water 3-5 times.  Place rice and water in rice cooker on white rice setting. When rice is done, remove from rice cooker and fold in rice vinegar.
