Slani rastvor je 5% soli i 3% šećera. Drugim rečima, na 6 L vode koristila sam 300g soli i 150g šećera. Metoda se zove #wetbrining (vlažno usoljavanje). But je ubačen u rastvor u nedelju kasno uveče i u njemu bio do utorka kasno uveče – kada sam meso začinila, prebacila u pekač i ostavila ga u frižideru. Ustala sam u sredu, na 1. maj u 3 ujutru, ubacila ga u rernu na 120 stepeni i vratila se da spavam 😊 Oko 10-10:30 h dodala sam i mlade krompiriće, pa nastavila pečenje do 14h – kada su i but i krompirići bili perfektno meki. I bila sam spremna za goste.
