The beef tartare was filled inside the cavity the onion with a emulsion and you pick it up and eat. Love the fermented sourness of the onion, it acted like the vinegar in traditional tartare but more complex. And the herb salt and yeast (emulsion?). Brilliant. Just brilliant.
