Tuna Cakes with Fresh Tomato Salsa Mix together tuna, onion, crushed crackers, parsley, garlic, lime juice, mustard, and jalapeno Tabasco, salt and pepper, egg. Pat tuna mixture into patties; Set on wax paper. Add olive oil over medium heat. Add two Tuna Cakes to the pan and cook until golden brown. Remove from pan and set on a paper towel covered plate to drain off any excess oil.
