Blueberry Mojito Popsicles
Blueberry Mojito Popsicles 2 sprigs fresh mint 1 cup fresh mint leaves 3/4 cup simple syrup 1 cup sparkling water 1/2 cup lime juice zest of 2 limes 6 tbsp light rum 1 cup blueberries Soak 2 sprigs of mint in simple syrup overnight. Combine simple syrup, sparkling water, lime juice, lime zest & rum. Pour into popsicle molds, until about 3/4 of the way full. Add 3-4 mint leaves and 8-10 blueberries to each. Press a popsicle stick into each mold. Freeze until solid. Inspired by Broma Bakery
