Ingredients: -4 large eggs -1 teaspoon extra virgin olive oil -broccoli florets -2 spring onions, finely chopped -1/2 bell pepper, finely chopped -grated cheese (I used mozarella and Red Fox Cheese from @beltonfarm ) -salt and pepper -fresh parsley Instructions: 1. Preheat the air fryer to 180 C. 2. Line the basket with parchment paper and add extra virgin olive oil. 3. Crack the eggs directly on top, season with salt and pepper and add all the toppings. Top with grated cheese. 4. Cook for 12-15 minutes, start checking to see if it is done after 12 minutes, as all air fryer models vary. 5. Allow to cool for 2-3 minutes before releasing it from the tin. Add some fresh parsley, slice it and serve. Enjoy!
