This Vegetarian Sushi Bake is my take on the VIRAL trend that has been ALL over Tiktok and Instagram for many months! Instead of fish, we're using a simple tofu mixture to keep this close to the original BUT fully meat and seafood free.

• 1 Unagi sushi sauce

• 1/2 Avocado
• 1/2 Cucumber
• 1/4 cup Green onions
• 1 Seaweed snacks/ nori

• 14 oz Tofu, firm extra firm

• 2 tbsp Furikake
• 2 tbsp Kewpie mayo
• 2 tbsp Soy sauce
• 1 tbsp Sriracha
• 1 Sriracha
Pasta & Grains
• 2 cups Sushi rice
Baking & Spices
• 1/2 tbsp Sesame seeds
Oils & Vinegars
• 2 tbsp Rice vinegar
• 1 tbsp Rice wine vinegar
• 1 tbsp Sesame oil
• 2 tbsp White wine vinegar

• 1/4 cup Whipped cream cheese
