Cooking with Raw Honey For sauces, marinades and salad dressings: substitute pure honey for up to half the granulated sweetener in a recipe. Tip: Honey will often taste sweeter than sugar, and you may find it too sweet for a one-to-one substitute in some recipes. Honey/ Baking with Raw Honey: Honey absorbs moisture from the air, making the baked goods moister. The result is a softer baked good that does not stale as quickly. Who doesn’t love that? Use orange blossom honey for up to half the granulated sweetener in a recipe. For each 1 cup of honey: reduce any liquid by 1/4 cup add 1/2 teaspoon baking soda (to help your baked goods rise) reduce oven temperature by 25 degrees Fahrenheit (to avoid overbrowning–honey burns easily)

Homemade Maraschino Cherries Here’s how to make (an adult version of) maraschino cherries: Wash and pit 2 cups of cherries (I like to leave the stems on). In a jar or bowl, whisk together 1/2 cup of sugar with 2 cups of maraschino liqueur (Luxardo). Stir in 2 teaspoons lemon juice and 1 teaspoon almond extract. Add the cherries and soak overnight. Great for cocktails, fruit salads and topping ice cream sundaes.

Homemade Vanilla Extra Fill your bottle or mason jar with vodka. Add your spent vanilla beans (after they’ve been scraped, rinse them off) – you’ll need at least three – put the top on and put it away for about three to four weeks. White pepper / White Pepper (Piper album) is from the same plant as P. nigrum, but White Pepper is the ripe fruit, partially deprived of its pericarp by maceration in water, then rubbed and dried in the sun. It contains albuminous seed, having small starch grains, taste and smell like Black Pepper, is more aromatic than black and not so pungent. Same as the black, but containing more starch and less ash. Sold as whole White Pepper or broken White Pepper.
