This non-vegetarian cheese takes 2 weeks to 2-3 months to ripen. It is covered with aromatic coating of rosemary, fennel seeds, juniper berries, occasional bird's eye chili. Sour, citrusy taste,feels a bit mild in the mouth. Musty and nutty aroma, it smells great. Matches nicely with Albarino, Riesling and Tempranillo.
