DJ Dave Diner 10/21 Avocado Ravioli Almondine - After ingesting 40 tacos the last 2 days, I knew this was going to be a Meatless Monday. Then I received a shipment of homemade avocado ravioli made with almond flour, stuffed with almonds, gorgonzola and fresh garlic (I could smell it before I unwrapped it!), and then a little drizzle of truffle oil, bourbon pepper and Parmesan did the trick. Long live the avocado!

DJ Dave Diner 11/2 Shrimp on Forbidden Rice w/ Béarnaise - Shrimp has to take 3rd billing tonight next to its co-stars, as I've meaning to cook this for a long time. I did a tangy Béarnaise with lemon, wine, vinegar, shallots, egg, and tarragon, topping a flavorful organic "forbidden rice"; a deep blue rice infused with blueberry juice. Major tannins, major flavor.

DJ Dave Diner 7/28 Horseradish Crusted Pork Tenderloin - Tonight I did s slow-roasted, panko-crusted pork tenderloin, with horseradish, Dijon. champagne vinegar, thyme and tarragon. Looking for a juicy pink in the middle (I hate overbooked pork!), and very happy with the way this came out! Sidekicked with a spinach salad w/goat cheese, basil-infused EVOO, slivered almonds, and a touch of honey.

DJ Dave Diner 3/10 Pecan Balsamic Tilapia w/Honey Butter - Wanted every taste bud to be serenaded tonight, so combined the sourness of balsamic, with sweet butter and honey, the nuttiness of pecans and brown rice and quinoa, and a touch of salty bitters. How to take something simple, and make it slightly exotic.

DJ Dave Diner 7/31 Langostino & Bok Choy Scampi - This is a recipe of mine I had pitched to the network, and is absolutely full of umami. Had to make it tonight; Bok choy sautéed in garlic, butter, EVOO, allspice, shallots, and sake, squat lobster meat drenched in the juice just before serving, and served over udon noodles, with ginger/lemon sauce and lemon zest. One of my go-to favorites to make!

DJ Dave Diner 6/6 Hot & Sour Soup - On a day that it was 110 degrees, the last thing I thought I'd be in the mood for was soup. But with extra beef stock that needed to be used, along with some rice wine vinegar, diced tofu, asparagus, carrots, green onions, shiitake, chili pepper, star anise, ginger and soy sauce, I just made sure to eat it indoors.

DJ Dave Diner 1/9 - Bourbon Apple & Cranberry Crepes - I've been soaking baked granny smith apples, cranberries, bourbon, honey, brown sugar and cardamom overnight, and baked them this morning. Keeping them warm, by tucking them inside some home made crepes, with a little powdered sugar and fresh vanilla bean. The kitchen smells like an amazing candle shop. Definitely my favorite way to eat apples!

DJ Dave Diner 4/6 Thai Basil Shrimp Satay w/Coconut Anchovy Sauce - Trying something new AND gluten-free for dinner; rarely do I use anchovy paste, but decided to mix it with coconut milk, basil, sliced almonds, and some Vidalia onions. Not fishy - very sweet. Add some shrimp, asparagus, and rice noodles, and sidekick it with some Sriracha seaweed salad with sesame seeds (say that 3x fast!). Bonsai!
