Vegan Apricot tart 🍑🍑 Almond crust 1 cup almonds, chopped 1/2 cup oats 1 tbsp almond butter @nu3_de 9 dates, pitted and chopped @palmyradelights 1 tbsp water Place all the ingredients in a food processor and process until you get a sticky dough. Press the dough into the tart tin and refrigerate whilst making the filling. . . Apricot filling: 1 cup almond milk 1 cup coconut milk 4 apricot, pitted 3 tsp stevia powder 1 tsp lemon juice 1 tbsp corn starch 1/2 tsp agar agar 1/2 tsp vanilla . . Place all the ingredients except the corn starch and agar agar in a food processor and blend until well combined. Pass through a sieve and pour the mixture in a saucepan. Add the corn starch and agar agar and bring to a brief boil, stirring continuously. Pour into a bowl and let cool until lukewarm, stirring from time to time.
