Ingredients:
• Olive oil
• 1-2 garlic cloves
• Handful of sundried tomatoes
• Fresh basil
• Zucchini & eggplant
• Salt & pepper
• 2 tsp tomato paste
• 100-150ml coconut milk
• Pasta water
Fry the garlic, sundried tomato and basil in olive oil. Then add in the zucchini and eggplant and season with salt and pepper. Add the tomato paste and coconut milk. Stir well
Then add some pasta water. For a thicker, creamier sauce start with a little bit of pasta water, you can always add more.
Mix in the pasta and serve in your favorite bowl. Top it with nutritional yeast, basil & sundried tomatoes ✨
