20min · 1 serving Ingredients: • 2 egg whites • 2 tsp granulated sweetener • 40g passata • 30g light mozzarella • Seasonings of choice (I used thyme, garlic, veg stock, coriander and chilli) How to: • 1. Pre-heat oven to 150°C. • 2. Add your egg whites to a bowl and whisk, add the sugar and then continue to whisk until it’s supper fluffy and thick. • 3. Pour your egg whites onto an over proof dish and shape it how you like - don’t spread it too thin or it will flake away later. • 4. Bake the ‘cloud bread’ for 20-25 mins and let it slightly cool. • 5. Turn the oven up to 200°C. • 6. As the cloud bread cools, prepare your base using passata and seasonings of your choice. • 7. Pour your base onto the bread and spread evenly, spread the cheese over the top and bake
