25min · 1 serving Ingredients: • 2 cups oat flour (blend oats into flour) 3/4 tsp baking soda 1/2 tsp baking powder 1 heaping tsp pumpkin pie spice 1 heaping tsp cinnamon 1/2 tsp salt 1 cup pumpkin pure 1/2 cup maple syrup or honey 1/4 cup plant milk 2 flax eggs (2 tbsp ground flax mixed with 5 tbsp water, set aside to thicken for a few mins) Easy two ingredient frosting: • Cashew butter + honey or maple syrup ( add in until desired sweetness is reached!) How to: • preheat oven to 350 F ~mix dry ingredients together in a medium bowl ~add in wet ingredients and mix until fully combined ~pour into a lined 8X8 brownie pan and bake on 350 F for 25 mins ~top with frosting, dust with cinnamon and enjoy!

Blend until you achieve a smooth, velvety mousse like texture. 3. Pour the mixture into a bowl and refrigerate it for 2 hours until it sets. 4. 20min · 2 servings Ingredients 🌿 • 2 cups kale • Large handful of basil • 2 cloves of garlic • 1/2 lemon (about 1-1 1/2 tbsp lemon juice) • 1/2 tsp salt • 3/4 cup roasted unsalted cashews • 1/4 cup nutritional yeast • 3/4 cup hot water • Pasta for 2 (about 250-300g) Method 🍝 • 1. Boil water and cook pasta according to directions. • 2. To a blender, add kale, basil, garlic, salt, cashews, nutritional yeast and hot water (the hotter the water the better as it helps soften the kale and cashews!). • 3. Blend for at least a minute until smooth and creamy. If needed, you can add a little more water. • 4. Once the pasta is cooked and drained, pour the creamy pesto overtop and mix well. • 5. Serve with fresh basil, a few chopped cashews and lemon zest. • 6. Enjoy! Notes ✨
